About this deal

Separate your frosting into bowls, color with food coloring, then cover with a damp cloth until ready to use so the frosting doesn’t dry out. room temperature eggs (you can speed this process up by putting them in a bowl of hot – not boiling – water for 5 minutes) Cut a small hole in the center of each. You are going to drop your doll into this hole. Make it as small as possible. I couldn’t find a cookie cutter the right size, so I actually make my circle cut pattern with a soft-boiled egg holder lid that my mother-in-law gave us. (First time I found legitimate use for it.)

I had to overcome a few structural issues in constructing this cake. First of all, I had to secure a long wooden skewer to the doll, under her dress. This would be inserted deep into the cake (about 3″), so I wouldn’t have to worry about the doll tipping over! I secured it with 2 zip ties, TIGHTLY under the dress. Next up? The sleeves. Her dress has sheer sleeves. Since I can’t get completely sheer I did roll it out as thin as I could, see… You can see the writing through the fondant. Cut it down to strips, about the width of the arm. Paint it with clear vanilla and carefully wrap it around her arms. Trim the edges under the arm! I love using our homemade buttercream frosting or fondant when I am decorating cakes with beautiful detail like these princess cakes. Fondant is great to get the smooth, flowy look. Buttercream frosting holds its shape well and it is easy to pipe so you can do all kinds of fun designs for your Disney princess cake. You will want about 6-7 cups of frosting to cover your cake if you are wanting to pipe the entire cake. This allows for some extra for dividing and color mixing. In the morning I let Rapunzel’s hair down, added the extension and draped it around the cake.

Find your “molds”.The “skirt” of the cake is baked in one or two 8″ cake pans and a glass bowl (or two glass bowls, one medium-sized and one small sized). That’s all you’ll need for the base of the cake, or the skirt. Get creative with what you have. Just make sure the bowls you are using are oven safe. A ceramic or stoneware mixing bowl will work great. The size of cake will fit any Barbie-size princess doll or Barbie doll. The cake itself, has 5 thin layers of vanilla cake, 3 – 8″ layers, and 1 – 6″ cake sliced in half. For these, I used my favorite Golden Vanilla cake mix from King Arthur Flour.

Get creative with decorations! You can use sprinkles or any shape or size, piping gels, or any other fun sugary ingredients you can find. For the Elsa Barbie doll birthday cake we used a Barbie that had a painted on body and a skirt (instead of a full dress). This made it super easy to decorate. We mixed Sky Blue and Lavender food coloring to get the right colors. We kept adding color a drop at a time until it matched Elsa’s bodice colors.
