Badvo Distillery is the brainchild of Helen Stewart, an English Literature student whose family have been farming in Pitlochry for over 400 years. A brand new Premium Scottish Gin Producer based in Callendar, they have really set out to be authentic and different. This began to decline as tighter regulations from both the estate and the government were introduced. Although a large number of islanders were still making whisky illegally, this industry ceased completely in the nineteenth century.​ All of Esker’s gins start in the same way with classic gin botanicals and the Esker twist – silver birch sap from the Kincardine Estate. Distilling days start early, using traditional copper stills (one called Drum, the other called Kelpie) to make the gin – the smell in the distillery when they are working is incredible. It is also able to hold its own against the more robust botanicals, but still impart its perfume and taste delicately, when handled with care. Hrafn Gin ‘Thought & Memory’ is an award-winning London Dry gin and so needs citrus to hold true to the required taste profile and to maintain balance. Mandarin does this to perfection by being able to sit in all of the three taste registers: top, middle and bottom.” As well as a range of distilled gins we produce liqueurs including a delicious cold-brew Coffee Liqueur, Cofaidh. Beans are freshly roasted by Cairngorm Leaf & Bean in Aviemore before we make them into the liqueur. Perfect for making the at home Espresso Martini. Today, the British have made gin very much their own drink, and it is now enjoying incredible popularity. While dominated by juniper, any number of botanicals can be infused — from aniseed to orange blossom — to achieve the desired taste. This has opened the door to a plethora of new and exciting gins, creating an upcoming and innovative craft-gin industry.

Scotland produces gin? That's right, Scotland doesn't just make the best whisky in the world, it's not bad at creating craft gins either.I’ll honestly drink any type of gin (with the exception of something ridiculously sweet). The only thing I look for is something quite “ginny”. After that I’m not too fussy. Although if the gin is overly flavoured, I don’t tend to enjoy it too much. For example, I have one from a gin club that I found to be too overpowering with rose and I literally cannot drink it. It’s not a Scottish Gin, though, so don’t worry!

Aberdeenshire has a rich heritage that links the area with the tea trade. The Newburgh estuary, was once a thriving market place with tea being one of its biggest imports.

Try using one or two garnishes at the very most. A good tip is to go with one garnish that gives a pop of colour: such as a berry garnish that matches the main flavour profile of the gin and balance this with a garnish that complements that flavour, such as something citrusy or herbal. The gin reflects the life they live in the hills; first up, however, you have to meet Panza, the chocolate Labrador who is the CEO (well he likes to think he is!). Garnishing with a lime or lemon wedge? Give it a good squeeze before dropping it into your glass, a wedge that has not been squeezed will just float to the top and add very little to the drink.
